Water Chestnut Corn Pork Soup

I have quite a bit of water chestnut and apples left in my fridge and wonder what I should do with them. Then I thought of this soup. Referencing from other sources, I modify slightly. water chestnut is a cooling food and is definitely suitable to drink in such a hot weather in Singapore now. Suitable for toddler as well and my boy kinda of likes it. But try not to give too much cooling food for toddler too. Just give him a few sips will do.

Water chestnuts, skinned
Soft bones (you may choose pork ribs too)
Pearl corn
Carrots, cubed
Apples, cubed (you may replace it with dates instead)
Water
Salt

methods.

  1. Pour hot boiling water over the soft bones after you cut and wash them.
  2. Boil a pot of water. Once it boils, put all the ingredients (except the salt) into the water.
  3. Let it boil for a while and turn to small fire to simmer for at least an hour.
  4. Before serving, add some salt to taste.

Mum mum’s notes:
I choose pork soft bones instead of ribs because they are more tender and more suitable for toddlers.
PS: The photo below shows no pearl corn because it is inside my tummy before I took the picture.. haha. You may choose normal corn too but it is not as sweet as pearl corn.
