Quinoa Chicken Nuggets

Finger food for my boys (Father and son). Instead of buying from fast food restaurant, making them homemade chicken nuggets will be a healthier choice.

Chicken breast meat, cut to pieces to desirable length
3/4 cup of quinoa
1.5 cup of water
Egg
Plain flour
Salt

methods.

  1. Marinade the chicken breast meat with soya sauce, sesame oil.
  2. Boil quinoa rice in a pot with the water. Reduce to simmer for 10 minutes. Cool the cooked quinoa.
  3. In one bowl, beat the eggs. Mix flour and salt in another plate.
  4. Coat the meat with plain flour mixture, then add to the bowl of beaten egg. Coat the meat last with the cooked quinoa.
  5. Pan fry the coated meats to golden brown.
Mummy’s notes:
Chicken thigh can be used instead of chicken breast meat if you prefer something more tender. Breast meat is tougher but is healthier.
