Just back from holidays and it was really tiring to prepare any meals after travelling. But yet I have to prepare because I do not like my boy to eat too much “outside” food with MSG. So I decided on this super simple meal – Singapore Style Japchae (clear noodles with mixed vegetables)
- Cook the noodle for 6 min in boiling water and place the noodle in cold water.
- Heat cooking oil in the wok, add onion and stir fry slightly. Add the rest of the ingredients except the hotdog. Add the hotdog last. Add some soy sauce.
- With the noodle in a big bowl, add the stir fried ingredients and soy sauce, sugar and sesame oil into the mixture.
- Mix thoroughly. Add more soy sauce, sugar and sesame oil if necessary. If you like, you can add sesame seeds.
Mum mum’s notes:
For Korean style, use normal hotdog instead of satay flavor ones. I bought the satay flavor hotdogs from NTUC Fairprice. It is said that the Japchae will taste better if you stir fry the ingredient one by one instead of stir fry all at one go. Well, being a lazy mum, I stir fry every ingredient together…
