This is my “BIG” dinner plan – nasi lemak. Nasi lemak is a Malay fragrance rice cooked in coconut milk and pandan leaf. It is an Asian food where the rice and the sambal chilli are the “soul” in this dish.. My hubby is always craved for nasi lemak and hence I decided to make him the home made nasi lemak. Glad he enjoyed it.

This is part of a “BIG” dinner plan.. In order to save time, I cooked this during weekend so that it will take lesser time to prepare for the “BIG” dinner. Is really my first time trying out this. I hope it turns out well. It is a time consuming process and I will recommend to attempt only when you are free. And if you are a sambal chilli lover, make a larger portion so that your effort is not wasted. You can keep in the fridge for at least 2 weeks? (I saw some recipes suggested that it can be kept for a month)

This is part of a “BIG” dinner plan.. In order to save time, I cooked this during weekend so that it will take lesser time to prepare for the “BIG” dinner. Frankly I prefer cooking this using my air fryer, which is a healthier method. But my dear hubby preferred the deep fried method.. Yes, it may taste better but it is pretty time consuming. So I decided to cook larger portion to satisfy his stomach.

I modified the Thai Glass Noodles with Prawns to this. The original dish is a Thai side dish which is supposed to be hot and spicy. I modified the recipe so that it is suitable for those who do not take hot and spicy food. It is a fairly simple dish which one can prepare within 15 mins.

I always want to cook Mac & Cheese again after a failed attempt using microwave. After “researching” a few recipes, I came up with this recipe. The result was not too bad. Simple way to make delicious Mac & Cheese using air fryer.

The initial idea is really to follow a recipe I saw in TasteMade to make a Gong Bao Bun. The recipe suggested a more spicy version, which I think is not suitable for my kid. So I revamp the whole recipe and luckily enough, it is still tasty (surprisingly). It is a new change for us as instead of keep eating rice or noodle during our dinner time, we get to eat this Chinese bun, which we called it Lotus Leaf Bun. Why it is called that? It is because of the shape of the bun is like lotus leaf.

Singapore has hot weather all year round and it is very easy for any one here to be “heaty”. So it will be good to have some “cooling” soup. So I made this for my boy who lately is “heaty”. Glad that he enjoys the soup. While it is boiled with just winter melon, pork and ikan bilis, the soup tasted as if it is cooked with cuttle fish.. Shiok!
