I have a sudden craving for pork ribs and was cracking my head how to cook pork ribs with porridge. After looking at few recipes, I came up with this recipe. End result – sweet flavor porridge. It is a very simple way to cook an all in one porridge.
- Wash red dates, dried shrimps and ikan bilis and put them into soup pouch.
- Blanch the pork ribs.
- Boil water with the soup pouch at high fire. Add the pork ribs and continue to boil for at least 30 minutes. Remove the soup pouch.
- Add the rice and braised peanuts. Turn to low fire. Simmer for at least 1 hour. Stir the rice once a while.
- Ready to serve when porridge becomes soft.
Mum mum’s notes:
If you do not have time to cook, you can do the same in the rice cooker in congee mode. Remember to remove the soup pouch before serving the porridge. Instead of using braised peanuts, you can also choose to use fresh peanuts instead. But that will require longer cooking time.
