Chinese black bean soup is one of the simplest soups to make at home. The black bean is an excellent source of protein and is said to help lower cholesterol. Using black bean to cook the soup will give it a natural sweet flavor. Adding other ingredients like dried cuttle fish and pork ribs will even add more flavor to the soup.
- Rinse the black beans. Soak the black beans for at least 2 to 3 hours or best overnight.
- Blanch the pork ribs in boiling water.
- Place the blanched pork ribs and all the ingredients in a pot of water.
- Bring the pot of ingredients and water to boil for at least 10 minutes and then simmer at low fire for at least an hour. Add some salt to taste.
Mum mum’s notes:
By soaking the black beans overnight will help to soften the beans so that it will shorten the cooking time for the beans. I also heard from my mum that by doing so, it helps to remove a certain kind of substances in the beans which may cause gout.
Avoid cooking the soup directly using slow cooker as the taste will not be as good as simmering it at low fire. Unless you intend to cook for at least 6 hours in the slow cooker, then you can choose to do so. Alternatively, you can put the soup in the slow cooker after simmering it at low fire for at least 30 minutes.
