Winter melon apple carrot soup

It is always summer in Singapore and the weather is hot and humid. As such, kids easily get “heaty” and develop sore throat, ulcer etc.. My kid also easily becomes “heaty” after eating all those fried food, playing under hot sun etc.. So to make sure he is “cooling” enough, once a while I will cook him some cooling soup. The ingredients are easily to find and it doesn’t take very long to cook. 🙂


Winter melon, cubed
Apples (any kind, I prefer Fuji apple though), cut to smaller pieces
Carrot, cut to smaller pieces

  1. In a pot of water, add the cut ingredients and boil it for at least 10 minutes.
  2. Simmer to low heat for at least 30 minutes.
  3. Add some salt to taste before serving. Isn’t that simple? 🙂

Mum mum’s notes:

You can even add pork ribs to the soup to give it extra favoring. Bear in mind that, before adding the pork ribs to the pot of soup, do blanch them in hot water so as to get rib of the “porky” taste..

For the winter melon, you can remove or keep the skin. It is really up to your preference.
