Soy sauce fried rice

I tried 2 versions of soy sauce fried rice before – one is from Wok Hey and the other is from a Japanese stall (they sold as omu rice). The one that Wok Hey is selling is called “Shanghai fried rice” but it is pretty much like soy sauce fried rice. I find myself take a liking of such fried rice – plain, simple and has soy sauce taste. It can be a vegetarian fried rice as well, with just having some veg in it. I think the most important ingredient in this dish is the soy sauce used. Initially I thought it will be just plain light soy sauce but it turns out that (after doing some research), the sauce has to be made up of several different sauces!
Preparation & Cooking time: Less than 30 minutes. Ideal time to cook: Anytime
ingredients.
- Overnight cooked rice
- Eggs, beaten
- Broccoli, cut to florets
- Prawns (optional)
- Fish sauce
- Dark soy sauce
- Light soy sauce
- Shaoxing wine
- sugar
- oyster sauce
- Sesame oil
- Salt to taste
methods.
- In a small bowl, mix the light soy sauce, dark soy sauce, oyster sauce, shaoxing wine, fish sauce and sugar. Mix well. I use around 1 tablespoons for all the liquids and 1 teaspoon for the sugar. You can adjust it accordingly to your preference.
- Blanch the broccoli very briefly. Dish and set aside
- Heat the wok with oil and quickly scramble the eggs. Set aside. Do the same for the prawn
- In the same wok, heat some oil. Add the rice, broccoli, prawn, soy sauce mixture and egg. Stir fry everything and taste it. If necessary, add a bit of salt.
- Dish up and serve..
Mum mum’s notes:
If you like the dish to be vegetarian, you an totally omit the prawn. Alternatively, if you are a meat lover, you can add some chicken cubes and it works as well.
