    Scrambled eggs seem easy to make. But I have attempted it many times and most of the time, it ended up overcooked. So finally I manage to get it right! 🙂 Still simple to make, just that you have to control the heat. 🙂

    ingredients.

    2 or more large eggs

    1 teaspoon unsalted butter

    2 teaspoon milk

    Salt (if you use salted butter, you can omit this)

    Pepper

    methods.
    1.Whisk the eggs in a bowl until the whites and yolks are completely mixed together and the eggs are a bit frothy.
    2.Add salt and pepper into the eggs mixture. Also whisk the milk into the mixture.
    3.Heat the pan over low heat (must be low heat!!). Melt the butter in the pan.
    4.Pour the egg mixture into the pan after the butter melts. Spread it out in a thin layer.
    5.Stir the eggs occasionally until the eggs no longer run in to fill the gaps when you stir. Depending on how you like the texture to be, if you stir frequently, it will give you smaller egg curds. If you stir less frequently, it will give you larger egg curds.. This will take around 10 to 15 minutes
    6.Remove the eggs from heat once done. Do not let the eggs rest on the hot pan.

    Mum mum’s notes:

    It will take some practice before you get the right texture. I have seen some recipe which indicates that you can add cream (instead of milk) to egg mixture. So if you prefer cream, you can choose that instead. Personally I like to add milk to my egg mixture.

    Is soup time! I always need to make sure that I have ample of ready home made stock in my fridge, so that I can easily cook a quick and simple lunch for my boy during weekend. I have spent hours to get a nice concentrated chicken and pork stock. So this time around, I have limited time to cook the concentrated stock. I decided to cook a simple stock, which will only take up 1 hour of my time. Simple and fast to cook!

    My boy loves this rice wet like porridge. So what I usually do was to cook soup and rice, then mix them together. He will just finish it in a flash. While he still enjoys to eat this style of rice, I grew tired of cooking soup and rice and mixing the same style of food for him to eat. So I decided to make him seafood mui fan instead. I am not sure where this dish is originated. It is made up of rice with seafood and thick gravy. Simple to make. My boy enjoys it and I enjoy cooking with variety!

  7. Pumpkin Corn Pork Rib Soup

    I always like to use pearl corn for making soup for my kid. This is because of the natural sweetness that the pearl corn will bring to the soup. And the sweetness is somehow enhanced by a bit of salt. Pumpkin is also another great food, which has a lot of nutrients for kids. And I usually cook the pumpkin with skin in the soup. You may choose to remove the skin before adding to the soup. But I have heard that pumpkin skin is full of benefits too, hence I always will cook/eat it with skin!
