    I remember that my mum used to cook this dish, so as to fully utilize her hot plate – a flat iron cast hot plate. And before she made this dish, she would have to heat up the hot plate for a long time before she can start cooking the dish. But I do not have such a iron cast hot plate!     My boy loves this rice wet like porridge. So what I usually do was to cook soup and rice, then mix them together. He will just finish it in a flash. While he still enjoys to eat this style of rice, I grew tired of cooking soup and rice and mixing the same style of food for him to eat. So I decided to make him seafood mui fan instead. I am not sure where this dish is originated. It is made up of rice with seafood and thick gravy. Simple to make. My boy enjoys it and I enjoy cooking with variety!

    The traditional claypot rice takes a long time to cook. The rice is slowly cooked in the claypot on the stove and the ingredients are then added when the rice is half cooked. Well, we certainly do not have the luxury of time to cook that. So we have to modify the method to cook the same using rice cooker. Of course, the taste will not be exactly the same. But at least we can have a pretty “fast food”

    Why it is called 3 cups chicken? Simply because to cook this dish, there are 3 key ingredients (beside chicken) that must be present – soy sauce, rice wine and sesame oil. And to add to the flavor, basil leaves is also a must-add for this dish. Depending on your preference, you can adjust the amount of basil leaves you like to add. For my family, we simply love the smell and usually I will make more sauce so that it goes perfectly with a bowl of rice. Is a simple dish, which anyone can whip it within 20 minutes.
