Dutch Oven Claypot Rice

Preparation & Cooking time: Less than 30 minutes.       Ideal time to cook: Anytime

ingredients.

  • Boneless chicken thigh, cut to small pieces
  • Shaoxing wine
  • Light soy sauce
  • Dark soy sauce
  • Oyster sauce
  • Sesame oil
  • Ginger powder/ ginger juice
  • Dried mushrooms, sliced
  • Dried shrimp
  • Chinese sausage, sliced
  • Shallots, sliced
  • Garlic, minced
  • Salted fish, sliced
  • Rice
  • Water

methods.

  1. Marinate the boneless chicken thighs with shaoxing wine, light soy sauce, dark soy sauce, oyster sauce, sesame oil, ginger powder or ginger juice. It is best to marinate overnight
  2. Heat up the Dutch Oven over medium heat with some oil. Sauté the minced garlic and shallots till fragrance. Add the dried shrimp, Chinese sausage and mushroom. Stir fry for another few minutes
  3. Add the chicken and all the marinate sauce. Stir fry till the chicken is half cooked. Dish out and set aside
  4. In the same Dutch Oven, add the washed rice and season it with oyster sauce. Do not add a lot since the marinate sauce could be salty as well
  5. Place the chicken and other cooked ingredients on top of the rice. Add water (1:1 ratio – 1 cup of rice to 1 cup of water). Put the lid on and cook for 25 to 30 mins in low heat
  6. In another wok with heated oil, fry the salted fish till they are crispy. Dish up and set aside
  7. Give a good stir of the rice and chicken 5 to 10 mins before turning off the heat. There could be some burnt rice but that is ok. It will be the rice crisp!
  8. Serve the rice with the crispy salted fish.
